


Our menu changes continuously, according to the season. We like using organic ingredients from local farmers, as well as wild mushrooms and plants from the Carpathian forests. We try to work with animal products from farms that strive for stress-free conditions and better enviroment for animals, such as meat from welfare farms, fish from fresh water ponds or free-range eggs. Our venison comes from wild-living animals from local forests.
With the approval of the association Human Progress, we have adopted a cage-free commitment: "Since 2025, Bistronomy has been using exclusively cage-free eggs. This commitment applies to eggs, both liquid and dried eggs, and to egg additives in our own products, and applies to all our own and licensed establishments."
We get to know the winemakers, their mindset, their view of the world, of nature, of winemaking. That´s how we create our wine list.
We have selected almost 200 wines with our sommelier Matej Demčák. It´s mainly small local wineries, but also world-famous regions. There is a wide selection of Champagne and natural, biodynamic wines, because we simply love them!
For 2026, the prestigious global wine guide Star Wine List known as the "Michelin guide for wine" awarded us two Silver Stars in its international rating, in the categories Best Austrian Wine list and Best Short List.

The restaurant’s kitchen is led with a clear vision by Head Chef Karol Szuri. He brings modern gastronomy to Bistronomy with ingredients that haven't flown halfway across the world, but instead come from local suppliers he knows personally.
Is an advance reservation required for Bistronomy?
To ensure the best possible experience and guarantee a table, the restaurant recommends making a reservation in advance. Tables are typically available in the online booking system 3 months ahead. For dates further in advance or for larger groups, guests are welcome to contact the restaurant directly via email.
Can you accommodate dietary restrictions or allergies?
If you prefer a vegetarian or pescatarian version of the menu, simply mention it in the notes when making your reservation. The culinary team led by Karol Szuri can also adapt the menu to other common dietary preferences or allergies if informed in advance. However, due to the complexity and nature of the dishes, the tasting menu cannot be fully adapted for vegans, nor for those with histamine or milk protein allergies. The restaurant kindly asks guests to provide notice of any dietary restrictions at least 24 hours in advance.
